Moussaka with Greek-Style Panzanella

We love seeing more hearty food making its way to the menu. Tonight get ready to dine on two Greek-inspired dishes; a traditional Moussaka and a Greek-style panzanella. The moussaka starts off with ground lamb and beef being sautéed with onion, garlic, and tomatoes; then seasoned with red wine, cinnamon and allspice. As the lamb mixture simmers, the eggplant is cut into strips and broiled. A cream cheese béchamel sauce is made and the moussaka starts to take shape. Layers of eggplant, lamb and tomato sauce, cream cheese sauce, and parmesan cheese are assembled and then baked. It is creamy, rich and meaty. Ideal for a night in. We paired a Greek style panzanella salad to go with the moussaka. The bread salad has cucumbers, bell peppers, tomatoes, onions, feta, and kalamata olives; all dressed in a Greek vinaigrette. What an amazing combo that is both hearty and fresh. Plus, enough for leftovers the next day.
