Mushroom-Spinach Soup with Cinnamon, Coriander and Cumin

This is a very aromatic and surprisingly filling soup. Our Middle Eastern mushroom and spinach soup is made up of a medley of sliced mushrooms and minced shallot cooked in a light tomato vegetable stock. The soup is seasoned with toasted cumin, coriander, all-spice and cinnamon. Once all of these components are added to the soup it is left to simmer so the flavors meld. The last ingredient that is added is the spinach, because it cooks so fast. Enjoy this soup with a few slices of pita or crunchy Italian bread. Add a bit of richness to it by mixing in a dollop of Greek yogurt.
