Celebrate the summer harvest with this roasted vegetable couscous salad. Sit out on your porch and dig your fork into roasted eggplant, leeks, bell pepper, and tender couscous. The salad is lightly dressed in a garlic fresh herb balsamic vinaigrette. We did not forget the perfect summer tomatoes.
