Staying in? Well we have just the dinner for you. Our Italian-style beef-stuffed eggplant will get you ready to watch your favorite streaming show. A tender eggplant is stuffed with sauteed beef, diced onion, red pepper, garlic, and chopped eggplant; then seasoned with parsley and basil. This stuffing base is then combined with fresh tomatoes, bread crumbs, an egg, and romano cheese. The filling is then placed in the eggplant and baked until golden brown and the eggplant is tender. It is so meaty and delicious. We paired it with a colorful chopped salad made up of greens, figs, walnuts and prosciutto with shavings of Gorgonzola. What a duo!
