Nothing beats a freshly grilled brochette. This time fire up the grill for our halibut kebab provencal. Each skewer has cubed halibut, zucchini rounds, eggplant, tomatoes, bell pepper, and red onion; then seasoned with fresh herbs de provence. Our blend included fresh basil, marjoram, thyme, rosemary, sage, fennel seeds, and lavender. Once the halibut and veggies are grilled be sure to drizzle the lemon-garlic-wine reduction over top. Halibut is a delicious fish to grill and it holds so much flavor. It pairs perfectly with the grilled potato and summer squash. Sliced summer summer squash, coined potatoes slices and diced red pepper pepper are char grilled then dressed in a marjoram-lemon dressing. This is the ideal summer grilling lunch or dinner.
