Gratineed Chicken in Cream Sauce with Vegetables

Craving a country French-inspired meal? Well, you are one click away from it. Chicken thighs are lightly seasoned and seared then are added to a medley of carrots and onions. Next we deglaze the pan with white wine add chicken broth, thyme and parsley; then begin braising the chicken. Once the braise comes to a simmer the potatoes are added and the meal is slowly cooked until the chicken and potatoes are fork tender. Next we swirl in the creme fraiche to add richness and spring peas for a burst of freshness. The chicken is then removed from the braise and then the grated gruyere cheese is sprinkled over the chicken before it is quickly roasted. Serve the gratineed chicken with the creamy sauce and vegetables. What a way to celebrate spring!
