This soup will bring a smile to your face! Why? Because roasted red peppers have a fantastic smoky sweet zing to them. The soup starts out with red bell peppers being roasted over an open flame until charred. Next they are peeled, seeded and sliced. The peppers are then sautéed with minced garlic, shallots, carrots and potatoes; then vegetable stock is added and the soup comes to a simmer. Once the peppers are tender the soup is pureed until smooth and seasoned with lemon juice, thyme, white wine, and cream. Serve the soup hot with a dollop of creamy mascarpone cheese and croutons. Enjoy.
