A very hearty and delicious winter meal is here. Cider roasted pork tenderloin with roasted carrots and apples served with thyme roasted potatoes. Indeed this dish is very “meat and potatoes”, but is also jammed packed with winter flavors. The flavors come through from the spiced cider brine the pork gets. In that brine you will find cinnamon, garlic, red pepper flakes, coriander, shallots, orange zest and cider vinegar. We love the combination of the roasted carrots and apples with the pork tenderloin. It has the right amount of sweet to the savory. This meal will sure make heads turn at the office.
