Switch up your taco Tuesday’s with this chipotle chicken taco salad. This is one entrée we know you will be dreaming about. Dig into a crispy bed of romaine topped with chopped roasted chicken breast, tomatoes, black beans, avocado, diced onion and corn. This Mexican inspired salad is dressed in a creamy chipotle sauce made with fresh cilantro, sour cream, minced chipotle, adobo sauce, cumin, chili powder and lime juice. The salad is filled with tons of fresh ingredient and the chipotle dressing ties it all together. Oh, there is more the salad comes with a serving of green gazpacho soup. This gazpacho has no tomatoes in it, instead it is made up of cucumbers, onion, garlic, grapes, almonds, and bread. This mixture is pureed until chunky then it is seasoned with white wine vinegar and olive oil and garnished with sautéed shrimp. If this is way too much delicious for one meal; break it up into two.
