Roasted chicken thighs are hand shredded and then simmered in a tomatillo, garlic, onion, jalapeno and cilantro sauce aka a salsa verde. You fill each of your flour tortillas with the shredded chicken and garnish with your favorite fajita toppings such as sour cream and salsa. Keeping with the south of the border theme, we made you a black bean soup that has a little kick to it. Tender black beans are cooked with onions, carrots, celery, garlic, ancho chilis, oregano, and cumin in a chicken stock, then pureed. Each spoonful is rich, spicy and delicious. You can also break this meal into two or just keep it all for one seating.
