Tender chicken cutlets are lightly floured and sautéed until golden brown then topped with a creamy pan sauce made up of shallots, diced tomatoes, white wine, chicken stock and heavy cream. The cream sauce is seasoned with fresh chopped tarragon. This meal totally is one to enjoy at home with someone special. The chicken is served with a side of crème fraiche mashed potatoes garnished with chives. Yet another meal screaming for a glass of white wine, like a dry Riesling.
