Chicken and Couscous Salad with Radishes, Cucumber and Toasted Pine Nuts with Carrot Soup with Ginger and Lemon

On this summer’s day take the time to enjoy this fantastic soup and salad combo entrée. We paired the chicken and couscous salad with the carrot soup. A whole bunch of early summer going on with these two items. The chicken and couscous salad is made up of chopped pieces of chicken, couscous, sliced radishes, and diced cucumber all tossed in a garlic cumin vinaigrette. Don’t forget to garnish with the toasted pine nuts. This salad is surprisingly filling and oh so delicious. Our carrot soup seasoned with fresh ginger and lemon is a show stopper. The soup starts out with sautéed onions, carrots, garlic, chopped tomatoes, fresh ginger and lemon zest; then vegetable stock is added. Once the carrots are tender, the soup is pureed until smooth and finished with a touch of sour cream. So both of your bases are covered with this entree and you can split them up into two meals too.
This meal is ready to warm, assemble, and enjoy.
