Fresh Michigan corn is charred then cut off the cob then folded in with basil, tomatoes, rosemary, and chives. This is the fresh corn salad that is then topped with a grilled chicken breast. Don’t forget to dress the salad with the lime-jalapeno vinaigrette. It has just the right amount of heat to it. The corn and chicken salad comes with a serving of our creamy zucchini and cilantro soup. The soup has chopped zucchini, sliced leeks, poblano pepper, garlic, chicken stock, parmesan cheese, and a bunch of cilantro. Once the zucchini is tender, the soup is pureed and then finished with crème fraiche. This zucchini soup is creamy and is zesty. This Mexican and summer-inspired duo make dinner time a breeze.
