Cheese and Spinach-Stuffed Portobello with Green Minestrone

Don’t overlook this meatless combo. A roasted portobello mushroom is filled with a mixture of sauteed spinach, grated parmesan cheese, chopped Kalamata olives and ricotta cheese. The mushroom is baked again and served atop house made tomato sauce. Just to keep with the Italian theme we paired the mushroom with a cup of or green minestrone soup. The soup has spinach, zucchini, garbanzo beans, cannellini beans, and pasta all simmered in a vegetable stock. A great pair to savor any day of the week.
