Is you lunch routine at work getting boring? Try this broccoli quinoa casserole. It is super easy to warm and devour at your desk. Tender quinoa is folded into a cheesy béchamel sauce along with tender crisp broccoli florets and shredded chicken breast. The cheesy béchamel is made with milk, cheddar cheese, onions, flour and garlic, this all slowly cooks until the sauce thickens. The cheesy quinoa casserole is topped with more cheddar and parmesan then baked until golden. Think of it as a modern baked potatoes with cheese, broccoli and chicken. We paired the casserole with a baby spinach salad comprised of sliced apples, toasted almonds, and a champagne cider vinaigrette. What an amazing lunch, probably enough for two!
