Our bay scallop gratin has one delicious topping made up of minced shallots, garlic, fine herbs, strips of prosciutto, Pernod, lemon juice and butter. This creamy topping then gets crunchy panko folded in. The bay scallops get a splash of white wine, topped with the creamy panko mixture, then baked until golden brown. Crunchy, creamy, and filled with sweet bay scallops. To cut through the richness we paired a kale salad with the scallops. This kale salad also features pan fried sweet potatoes “croutons”, pear slices, quinoa, dates toasted pistachios and a maple syrup apple vinaigrette. This is a filling meal for dinner or break it up into two meals for lunch.
