One ingredient we love that starts becoming more predominant in the late spring and summer is zucchini. It is so versatile. Here we grate the zucchini and fold it into a batter made up of eggs, flour, onions, fresh herbs, and feta cheese. Patties are made out of the zucchini batter and then they are pan fried until golden brown. Top the croquettes with fresh lemon yogurt and serve with the sauteed garlic mint spring peas. A beautiful and inventive meatless entrée to have for dinner this week.
