This tomato broth soup starts off with sautéed onions, garlic and jalapeno; then seasoned with toasted cumin, cilantro and chili powder. Next black beans and diced zucchini are added, the soup is brought to a simmer and the flavors begin meld. Top each serving with crispy strips of corn tortillas. If you want to add a bit of richness add some cheese or diced avocado.
