Here is something new for you, a vegetable reuben sandwich. We build this reuben nearly the same way, you still get the Russian dressing, tangy sauerkraut, melted swiss cheese and rye bread, but instead of corned beef you get sautéed spinach, mushrooms, and onion. Just a whole bunch of yum. The sammy comes with a cup of our chickpea stew. In that stew you will find garbanzo beans, sliced carrots, diced onions and swiss chard; all seasoned with caraway seed and toasted cumin. Top the stew with minted yogurt and you have one fantastic lunch! So get ready!
