Jazz up your Taco Tuesday with this turkey and pepper jack quesadilla garnished with a seasonal cranberry and pear salsa. Shredded turkey, scallion and Monterey jack cheese are placed in a flour tortilla and griddles. Dunk the quesadilla in the cranberry pear salsa and sour cream. We make the salsa from scratch and it has cranberries, cilantro, lime juice, cumin, minced jalapeno and diced pear. It is bright, tangy, crisp and fresh. It comes with a serving of the roasted sweet potato and black bean salad. The salad has roasted sweet potatoes, black beans, diced bell pepper, tomatoes, arugula and mint; all dressed in a lime garlic balsamic vinaigrette. This is both a Mexican and Thanksgiving inspired meal. In other words a whole bunch of delicious.
