Change up your Mexican Monday’s with our flavor packed pork stew. Diced pork loin is seared and slowly cooked in a chicken stock base that is seasoned with cumin, onion, and garlic. We add diced yellow squash, pinto beans, black beans, crushed tomatoes, corn, and green chilies to the stew. The stew is brought to a simmer to allow all the flavors to meld. The stew is not spicy, just jam packed with veggies and flavor. Be sure to garnish each bowl of the stew with fresh cilantro and serve along side the baby spinach salad. Our salad has crisp bacon bits, creamy avocado, crisp apple slices, and tender baby spinach; all dressed in a tangy lemon cider vinaigrette. The vinaigrette is seasoned with paprika, mustard and a hint of ginger. What a Mexican-inspired duo to dig into this week.
