Meatless Monday strikes again. This week tackle it with our Thai-style yellow coconut curry with mango and vegetables. The curry begins with minced garlic, ginger and shallot being sauteed along with red cabbage and fresh chili. Next fresh red curry paste is added along with turmeric, tamari, coconut sugar, and coconut milk. Once the curry base has come to a simmer sliced red pepper, green peas, diced mango and broccoli are added. Serve the aromatic curry a top a bed of steamed rice and garish with cilantro, cashews, and thai basil. The mangoes add a a surprise of sweetness to this meatless meal. A total kitchen favorite.
