Get excited for our Thai-style vegetables in red curry. A medley of fresh vegetables are pan sauteed then simmered in a red curry paste with coconut milk. You will find sliced red bell pepper, green bell pepper, carrots, and chopped kale. The curry is seasoned with a touch of tamari, coconut sugar, lime juice and rice vinegar. Serve the curry with steamed rice and top with cilantro. This meatless meal is not just aromatic, but so filling. It has the right balance of sweet and heat to it. Plus it will make heads turn at work.
