Celebrate the summer’s bounty with this delicious sweet onion and corn soup. The sweet onions are sliced and butter sautéed until golden with freshly shucked corn. Next the onion and corn mixture is seasoned with a touch of sugar and thyme; then deglazed with white wine. Vegetable stock is added and the soup is brought to a simmer. Lastly the soup is lightly pureed and finished with a touch of cream. Yum!
