Change up your typical pasta night with our sweet and spicy tofu soba noodle meal. Tender buckwheat soba noodles are tossed in a sweet and spicy soy sauce comprised of sesame oil, garlic, ginger, green onions, soy sauce, brown sugar and red pepper flakes; then studded with crisp pan-fried pieces of tofu. Serve each helping of the tofu noodles with fresh cucumber slices, radish, cilantro sprigs and a squeeze of lime. Each bite is fresh, sweet and savory. To add a bit more crunch to the meal we paired it with a helping of spicy napa cabbage slaw; dressed in a rice vinegar, sugar, ginger, and jalapeno and cilantro dressing. So both elements of the meatless meal have a bit of zip to them. Enjoy!
