We have an outstanding meatless Monday meal for you this week. This sunchoke and artichoke pasta will have you on culinary cloud-nine. We start off by sautéing the shaved sunchokes and artichoke hearts with sliced red onion, garlic, and red pepper flakes. Once tender these golden veggies are folded in with el dente pasta and finished with a splash of lemon juice, torn mint and grated romano cheese. We totally love the sunchokes in this pasta dish, creamy and nutty, just yum. This pasta entrée comes with a side of our kale and Brussels sprouts salad garnished with toasted almonds, romano and a lemon shallot vinaigrette. Enjoy.
