Stuffed Mexican Shells with Chipotle-Chickpea Salad with Tomatoes and Pepitas

Here is a twist on an Italian classic dish. Instead of a classic cheese filling we spice it up by adding a Mexican flare to it. Seasoned ground beef, corn, black beans, salsa, cheddar cheese and Monterrey jack cheese fill these pasta shells. They are then baked in with more cheese on top. Garnish with shredded lettuce and sour cream. To accompany the pasta shells we added a side of our chipotle chickpea salad. This Mexican-inspired salad is made up of plump chickpeas, fresh chopped tomatoes, shaved onion, and torn cilantro all folded into to a chipotle lime mayonnaise. Then seasoned with toasted cumin and topped with pumpkin seeds aka pepitas. A creamy, meaty and smoky salad that compliments the shells.
This meal is ready to warm and enjoy.
