One of the salads we enjoy to make the most during the summer is this grilled skirt steak and green bean salad. We start off by marinating the steak in a chopped red onion, garlic, and olive oil mixture, then grill it to perfection. In the salad you will find fresh tender crisp green beans, sliced cherry tomatoes, minced jalapeno, cilantro, shaved red onion and crunchy peanuts. The salad is tossed in a citrus vinaigrette made with fresh orange juice, sriracha, fish sauce, sherry vinegar, lime juice, and orange zest. Need more flavor? Well this steak salad comes with a cup of carrot ginger soup. Pureed carrots and onions, seasoned with fresh ginger and red pepper flakes; simmered in an aromatic chicken stock. The soup is then enhanced with soy sauce, lime juice, brown sugar, peanut butter, coconut milk, sesame oil and milk. Lastly it is garnished with roasted coconut shrimp. Wow! This is a flavor explosion!
