Have the winter blues? This Spanish-style spicy chicken will help melt them away. This dish is made up of sautéed chicken thighs seasoned with paprika, garlic and black pepper. The thighs are simmered in a green peppers, onion, green olives, sherry, garlic, red pepper flake and tomato sauce until fork tender. Serve the chicken thighs and sauce a top of rice. Have a nice glass of red wine with this entrée. Each bite is meaty and jammed packed with spicy tomato sauce. We paired the chicken with an arugula salad with sliced grapes, manchego, marcona almonds and a sherry balsamic vinaigrette.
