Here is a new and exciting dish for you to dig into this week. Our Moroccan- inspired shrimp tagine will shake up your typical dinner routine. The base of the tagine is made up of stewed tomatoes, garlic, carrots, onion, sliced bell peppers, and potatoes. It is seasoned with saffron, cumin, paprika, cilantro and ginger; before the chopped green olives and preserved lemon are added. Lastly the tagine receives the star of the show, the sautéed shrimp seasoned with ginger, cumin, and paprika. The shrimp along with the tagine sauce make for one amazing pair. But, wait there is more. We paired the tagine with a quinoa salad with roasted eggplant, sliced apples, walnuts, and sunflower seeds; all dressed in a cumin-cider vinaigrette. Wow, need we say more.
