Change up your typical meal selections with this sausage-stuffed zucchini entree. These zucchini boats are hollowed out then filled with a sautéed Italian sausage mixture made up of onions, garlic, zucchini, and tomatoes. Once the zucchinis are filled they are then topped with parmesan, mozzarella, bread crumbs and parsley; then baked until golden. Each bite is meaty, packed with tomatoes and lots of cheese. We added a baked parmesan tomato to sweeten the deal. This duo will get you excited for dinner again.
