You are one click away from an elegant autumn inspired stuffed pork tenderloin dinner. We take a pork tenderloin and fill it with a sautéed mixture of breakfast sausage, minced onion, garlic, chopped collard greens and diced apple. This mixture is seasoned with fresh thyme and sage; then enhanced with tangy creamy goat cheese. Once the pork tenderloins are stuffed, they are then wrapped with slices of back and roasted until golden brown and aromatic. Each bite is packed full of sausage, cheese, apple and greens. Top the tenderloin with the luscious bacon apple Riesling sauce. We paired a side of mashed butternut squash seasoned with sage to go along with the stuffed pork tenderloin.
