A light meal is on deck for you to enjoy tonight. Oven roasted salmon served with a Mediterranean inspired orzo salad. The salad has crisp spinach, feta cheese, grape tomatoes, shallots, basil, chives, toasted pine nuts and orzo all tossed in a cabernet vinaigrette. Together the salad and the salmon make for one filling meal. After one bite you will feel like you are on the Greek coast or maybe just on the golf coarse.
