Everyone loves a solid caprese salad in the summer because the tomatoes are pretty perfect. Oh and you totally love the fresh mozzarella cheese. Here we slice and roast the tomatoes until they are caramelized. The tomatoes are then joined by sliced fresh mozzarella cheese, torn basil, olive oil and balsamic vinegar.
