When we think about spring here in the Now Plating kitchen this meal comes to mind. Diced chicken thighs are folded into steamed rice along with blanched and sliced asparagus, tomatoes, and red onion. The rice salad is seasoned with a champagne vinegar, lemon juice, Dijon mustard and olive oil dressing; then topped with toasted pine nuts. The salad comes with a cup of our minty pea soup, that is finished with a touch of cream. You will love the fresh mint in this pea soup. Think spring!
