Spice up your meatless Monday routine with this Thai-inspired vegetable curry. This aromatic curry starts out with onions being sauteed with garlic, serrano, ginger, tumeric and red Thai curry paste. When the sauteed veggies become fragrant red lentils, diced sweet potatoes and vegetable stock are added. Once the lentils and potatoes are tender coconut milk and the baby spinach are folded in. Be sure to serve the curry with a squeeze of lime, chopped cilantro and coconut flakes. You will savor each spoonful of this flavorful meatless curry. We paired our apple-bok choy salad with it. It is an Asian inspired salad made up of sliced bok choy, shredded carrot, chopped apples and diced red onion. It is dressed in a sweet and savory cashew dressing made up of balsamic, dijon, raisins, and soy milk. Something a bit different for the week, but just so fresh. The two will make a perfect duo to binge watch your new Netflix show with.
