Sit back and relax, we have dinner covered. Tonight set the table for our pot roast carbonnade. A beef roast is slowly braised until fork tender in a beer and beef stock sauce sweetened with prunes and seasoned with thyme. The beef is also braised along side rendered bacon, onion, and carrots. Slice to roast once it is tender and serve with the tender carrots and spoon over the braising sauce. We love the richness the bacon and beer add to this pot roast. It really modernized a comfort food classic.
