This pork meat loaf is made up of diced bacon, prosciutto, bread crumbs, sun dried tomatoes, onions, garlic, roasted red peppers, egg and ground pork. The mixture is then seasoned with thyme, red pepper flakes, parsley and oregano. So much flavor! As the meatloaf is baked a chickpea and tomato sauce is made and then is poured over the meatloaf as it bakes. This then becomes the sauce for each pork meatloaf slice. Serve the meatloaf with our creamy mushroom and cheese polenta. Wow, what a pair.
