This week check out our modern version of pasta and meatballs. If you are looking for a pasta dish that is heavy on the tomato sauce, this entrée does not fit that bill. Instead, get your fork ready for a light fresh sauce to coat your pasta and meatballs. The chicken meatballs are hand formed and sautéed until golden brown. The meatball mixture is made up of ground chicken, breadcrumbs, parsley, eggs, milk, and romano cheese. Once the pasta is el dente, toss the pasta with chicken stock, mozzarella balls, parmesans, cherry tomatoes and chopped basil. That is one light and delicious sauce that allows the chicken meatballs to shine. The pasta comes with a side of herb drop all butter biscuits. Be sure to dunk them in the pasta to saver the light sauce. Enjoy!
