Summer is creeping up and we are getting excited about all of the salad. This week we are jazzed about this orzo salad. Tender orzo is folded in with diced feta cheese, scallions, cherry tomatoes, basil and toasted pine nuts. The pasta salad is then dressed in a light honey, lemon and red wine vinegar dressing. Each bite is fresh, creamy and crunchy. This salad pairs well with any of our meals this week or as an addition to your grilling needs.
