Another classic soup is on the menu this week. Our mushroom-barley soup will make you miss you mom, and yes call her right now. The soup starts out with onions being sautéed with carrots, celery and sliced mushrooms until golden. We then add a homemade chicken stock and allow the soup to come to a simmer. Lastly we add barley and allow that to cook in the soup until tender. Each spoonful is packed with mushrooms, veggies and barley. Don’t forget your favorite bread to dunk in this one.
