Moroccan-Style Braised Beef over Couscous with Bibb Lettuce with Cumin-Roasted Beets and Onions with a Feta Dressing

Step out of your dining box tonight and try this Moroccan-style braised beef dish. The beef roast is braised until its fork tender in an aromatic beef broth. The braising base starts off by sautéing onions and garlic then, then this is seasoned with cumin, turmeric, paprika and cayenne pepper. Next it is deglazed with dry red wine and sherry. Tomatoes, golden raisins and beef stock are poured in, the seared beef roast is added back to the braising liquid. The beef is cooked until fork tender. There are many layers of flavor in this entrée. Serve the braised beef a top the couscous. This entrée comes with a side of our bibb lettuce and cumin roasted beet salad. In this dish the onions and beets are seasoned with cumin and roasted until the beets are tender. The roasted vegetables are added to bibb lettuce then topped with a feta dressing. That creamy dressing is made up of chunks of feta cheese, Greek yogurt, honey and lemon juice. The nights are getting chillier and this meal will totally warm you up.
