This Mexican-inspired chicken soup will definitely one of your all time favorite soups after one spoonful. The soup starts off with diced onions being sautéed with garlic and jalapeno; then it is seasoned with chili powder, oregano, and cumin. Once aromatic, we add freshly made chicken stock to the sautéed onions plus diced tomatoes, green chiles and hominy. Lastly we add to shredded chicken to complete this zesty soup. Each spoonful is packed with spice, hominy and chicken. Don’t forget to garnish with avocado, cilantro and a wedge of lime.
