This entrée sounds a bit different, but it is out of this world. Normally we would stuff a bell pepper, but this time we are using a head of escarole. We quarter it and top it with red pepper risotto garnished with golden raisins, capers and pine nuts. This escarole is out of this world. It is surprisingly meaty and is jammed packed with amazing flavors. This is one entrée you should not overlook. The stuffed escarole is roasted with parmesan cheese and served with a side of marinated cauliflower with carrots and mint. This steamed veggie side is dressed in a bright sherry vinaigrette. This meal is surprising meaty and filling.
