Nothing is better then a fresh vegetable curry on a cold day. It lifts you up on so many levels, especially how aromatic it is. Our Indian curry starts out with onions being sautéed with garlic and ginger; then spiced with coriander, cumin, turmeric, cayenne and tomato paste. As these flavors meld vegetable stock is added, plus coconut milk and a cinnamon stick. Cauliflower florets, diced sweet potatoes, carrots, tomatoes and garbanzo beans are folded in along with spinach and peas. As the curry simmers the vegetables all cook. Once tender, serve the curry with steamed rice and warm garam masala biscuits. Each bite is nearly perfect, making it ideal for a winter lunch.
