Change up your dinner routine with this mushroom ragout with seared halibut. Sliced shiitakes and creminis are sautéed with chopped onions and garlic until aromatic. The mushrooms are then deglazed with white wine and we add chopped tomatoes, coconut milk, capers, golden raisins, chicken stock and miso. This ragout is slowly simmered and then seasoned with dijon and harissa. The coconut compliments the mushrooms and the miso add extra unami. Top the mushroom ragout with the pan sautéed halibut. Wow and this meal keeps getting better, we added a side of tender crisp haricot vert garnished with creamy cambozola cheese and toasted pine nuts. Wow, what a trio.
