You are one click away from a delicious meatless duo. Housemade Greek hand pies and a roasted tomato and bell pepper soup. The hand pies start out with a all butter crust dough that is then filled with a dill, mint, feta, Parmesan, egg and swiss chard mixture. Next the hand pies are sealed and baked in the oven until golden brown. We love the tender crust and the feta-herb filling. It is kind of a twist on a grilled cheese and tomato soup. We paired the Greek hand pies with a roasted tomato and red bell pepper soup. It starts out with tomatoes, red bell peppers, onion and garlic all being roasted golden in the oven. Once nice and toasty the vegetables are added to a stock pot along with some water then pureed until smooth. The soup is brought to a simmer to allow the flavors to meld, then seasoned with some fresh thyme and finished with some ricotta cheese for richness. Each spoonful is packed with tomato and red pepper goodness. Bright, fresh and delicious. Paired with the hand pies make for one stellar meal.
