Farro with Acorn Squash and Kale with Roasted Tomato Soup with Parmesan

Your meatless Monday meal needs have been answered. Get your fork ready for our farro, acorn squash and kale sauté. Tender grains of farro is sautéed with sliced kale, minced garlic, sliced onion and diced roasted acorn squash. This is all seasoned with white wine, vegetable stock and parmesan cheese. We love how the farro takes on the flavor of the wine and stock; it really ties the dish together. To make this meatless entrée more delicious it comes with a side of our roasted tomato soup; that is made with the season’s last tomatoes. Enough food for one big meal or for two small meals. You decide.
