One of our favorite Thai-inspired salads is this cucumber salad. It is bright, fresh, sweet and tangy. It will most defiantly bring a smile to your face. Seeded and sliced cucumbers tossed in rice vinegar, sesame oil, and fish sauce dressing. The salad is garnished with toasted peanuts and Thai basil. Nice, simple, fresh and easy. This cucumber salad makes for a refreshing snack at work.
