Creamy Roasted Red Bell Pepper Soup with Sweet Corn and Cilantro Cream

Warm up a bowl of our homemade creamy roasted red pepper soup. The soup starts out with charred red bell peppers that are diced then sauteed with onion, garlic and tomato paste. Once the onions are wilted we add vegetable stock and bring the soup to a simmer to allow the flavors to meld. Next we puree the soup until it is smooth, fold in the cream and roasted corn. Serve the soup with a dollop of cilantro-lime sour cream. Each spoonful is creamy and packed with pepper goodness.
